Garlic Broccoli

- Oyster sauce 1 tablespoon

Cut broccoli into small florets, soak in lightly salted water for 10 minutes, then rinse and drain. Bring a pot of water to a boil, add a pinch of salt and a few drops of oil, blanch broccoli for about 1 minute until bright green, then transfer to cold water to stop cooking. Drain well.
Smash garlic cloves and mince finely. Set aside.
In a small bowl, mix light soy sauce, oyster sauce (if using), salt, and 2 tablespoons water until well combined.
Heat a wok over medium heat, add oil, then add minced garlic. Stir-fry over low heat for about 30 seconds until fragrant and light golden.
Turn heat to high, add blanched broccoli, and stir-fry quickly for about 30 seconds to heat through.
Pour the sauce mixture along the edge of the wok, continue stir-frying over high heat for about 20 seconds until each floret is coated and the sauce slightly thickens.
Transfer to a serving plate and serve immediately.
Tips
Avoid overcooking garlic to prevent bitterness; adding salt and oil to blanching water helps retain broccoli's bright green color; for crunchier texture, reduce blanching time and increase high-heat stir-frying.
