Feilong Soup
Feilong Soup is a traditional northeastern Chinese soup, slowly simmered with feilong bird or young chicken, clear and delicious, nourishing and warming.
Ingredients
8 items- young chicken 1 (about 1.5kg)
- ginger 3 slices
- green onion 2 stalks
- cooking wine (Shaoxing) 1 tablespoon
- goji berries 20 pieces
- salt 1 teaspoon
- white pepper a pinch
- water as needed

Steps (5 steps)
Clean the chicken and cut into chunks about 4 cm. Place in cold water, bring to a boil over high heat, cook for 2 minutes. Drain and rinse with warm water to remove scum.
Transfer chicken to a clay pot. Add ginger, green onion, cooking wine, and enough water (about 2 liters). Bring to a boil over high heat.
Skim off any foam with a spoon. Cover and reduce heat to low, simmer for 60 minutes until the chicken is tender and easily pierced with chopsticks.
Add rinsed goji berries and continue to simmer for 10 minutes, until the soup takes on a slight red hue and the nutrients are released.
Season with salt and white pepper. Turn off heat. Serve in bowls, garnish with chopped green onion if desired.
Tips
Add all water at once; adding water later dilutes flavor. Blanching chicken makes the soup clearer. Add salt at the end to keep chicken tender.
