Eight Treasure Spinach

Ingredients
12 items- Spinach 300g
- Peanuts 30g
- Dried shiitake mushrooms 3 pieces
- Carrot 50g
- Five-spice dried tofu 2 pieces
- Vermicelli noodles 20g
- White sesame seeds 1 tbsp
- Light soy sauce 2 tbsp
- Black vinegar 1 tbsp
- Sugar 1 tsp
- Salt a pinch
- Vegetable oil as needed

Steps (5 steps)
Bring a pot of water to a boil, add a pinch of salt and a few drops of oil. Blanch spinach for about 40 seconds, then immediately transfer to ice water to keep bright green. Drain well.
Heat a wok over medium heat with 1 tbsp oil. Add peanuts and stir-fry over low heat until golden and fragrant, about 3 minutes. Remove and crush into small pieces.
Add a little more oil to the wok. Stir-fry diced shiitake mushrooms, carrots, and dried tofu over medium heat until mushrooms soften and carrots turn slightly translucent, about 2 minutes.
Add soaked vermicelli noodles, then pour in a sauce made from light soy sauce, black vinegar, and sugar. Turn to high heat and toss quickly until noodles are evenly colored, about 30 seconds.
Turn off the heat. Add the blanched spinach and crushed peanuts, sprinkle with toasted white sesame seeds. Toss gently with residual heat and serve.
Tips
Blanching spinach and then shocking in ice water keeps it crisp and green. Crushing peanuts after roasting enhances aroma. Feel free to replace toppings with seasonal ingredients like bamboo shoots or pine nuts.
