Ingredients

- Eggs 4
- Dried Shiitake mushrooms 3
- Ham 30g
- Ginger 10g
- Cooking wine 1 tbsp
- Light soy sauce 1 tbsp
- Salt 1 tsp
- Water starch 2 tbsp
- Broth 100ml
- Green vegetables some

Steps (6 steps)
Debone chicken thighs, cut into 1cm cubes. Marinate with cooking wine, light soy sauce, and minced ginger for 15 minutes.
Crack eggs into a bowl, add salt and water starch, whisk until foamy on surface, about 1 minute.
Lightly oil a deep bowl, evenly spread marinated chicken, diced mushrooms, and ham.
Slowly pour egg mixture into the bowl until 80% full, gently stir to let egg seep through gaps, cover with plastic wrap.
Bring steamer water to a boil, place bowl inside, steam over medium heat for 15 minutes until egg is fully set, no liquid when pierced with chopsticks.
Let bowl cool slightly, invert onto a plate, surround with blanched greens. In a small pot, bring broth to a boil, season with salt, thicken with water starch, pour over the egg dome.
Tips
Marinate chicken with a pinch of baking soda for extra tenderness; adding water starch to eggs prevents bubbles during steaming; covering with plastic wrap avoids water droplets from the lid.
