Dazhu Gansi (Braised Tofu Shreds)

9 items- Dried tofu 200g
- Chicken broth 500ml
- Jinhua ham 30g
- Shrimp 50g
- Chicken breast 50g
- Pea shoots 50g
- Ginger 2 slices
- Salt 1/2 tsp
- Cooking wine 1 tbsp

Cut dried tofu into thin shreds, blanch in boiling water for 1 minute, drain.
Cook chicken breast in cold water with ginger and wine for 10 minutes until cooked, shred.
Cut ham into shreds, marinate shrimp with wine and starch for 5 minutes, slice ginger.
Pour broth into pot, add ginger and ham, boil then simmer for 5 minutes.
Add tofu shreds and chicken shreds, cook for 3 minutes to absorb flavor.
Add shrimp until pink, then add pea shoots until wilted.
Season with salt, stir gently, serve when broth thickens slightly.
Tips
Choose firm dried tofu and slice as finely as possible; use clear chicken broth for the best flavor.
