Clear Simmered Turtle with Water Chestnuts
A nourishing classic featuring tender turtle meat and sweet water chestnuts slowly simmered in a clear broth, delivering a delicate flavor and rich nutrition.
Ingredients
8 items- Soft-shell turtle 1 (about 500g)
- Water chestnuts 200g
- Ginger 3 slices
- Spring onions 2
- Cooking wine 1 tbsp
- Salt 1 tsp
- White pepper a pinch
- Water 1500ml

Chop turtle into chunks, blanch in boiling water for 2 mins until surface changes and slime solidifies. Rinse and drain.
Peel and halve water chestnuts. Slice ginger and cut spring onions into sections.
Heat oil in pot over medium, sauté ginger and spring onion for 1 min until fragrant. Turn high, add turtle, stir-fry 2 mins until lightly browned. Add cooking wine.
Add enough water, bring to a boil, skim off foam. Cover and simmer over low heat for 1.5 hours until turtle is fork-tender.
Add water chestnuts, continue simmering over low heat for 30 mins until tender and broth turns slightly milky.
Season with salt and white pepper. Cook for another 5 mins to meld flavors.
Turn off heat, garnish with scallions or goji berries. Serve in a deep bowl.
Serve hot and enjoy the clear soup and tender meat.
Tips
Rinse the blanched turtle with warm water to thoroughly remove any fishy smell. Always keep the heat very low during simmering to extract collagen, the soup will gel when chilled.
