Chaozhou Sweet Taro
Chaozhou sweet taro is a traditional Chaoshan dessert, where taro is simmered with sugar to a soft, sticky sweetness that melts in your mouth.

- Granulated sugar 150 g (3/4 cup)
- Water 200 ml (3/4 cup)
- Lard 1 tablespoon
- Salt a pinch

Peel the taro, cut into 3 cm chunks, and immediately soak in cold water to prevent discoloration.
Bring a pot of water to a boil, blanch the taro chunks for 2 minutes to remove excess starch, then drain.
In a separate pot, combine sugar and 200 ml water, heat over medium until the sugar is fully dissolved.
Add the taro to the syrup, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until tender.
Uncover, turn the heat to high, and stir constantly to reduce the syrup until thick and glossy, about 3-5 minutes.
If using lard, drizzle it in and stir to coat the taro evenly.
Transfer to a plate and serve hot. Optionally garnish with toasted white sesame or dried osmanthus.
