Yellow Croaker Spitting Silver Threads

Ingredients
11 items- Yellow croaker 1 (about 500g)
- Vermicelli (rice noodles) 50g
- Mung bean sprouts 100g
- Ginger 20g
- Scallions 2 stalks
- Cooking wine 1 tbsp (15ml)
- Steamed fish soy sauce 2 tbsp (30ml)
- Sugar 1/2 tsp
- Salt to taste
- White pepper a pinch
- Cooking oil as needed

Clean the yellow croaker, score 3 slits on each side. Rub with cooking wine, salt, and white pepper. Stuff ginger slices and scallion sections into the belly. Marinate for 10 minutes.
Soak vermicelli in warm water until soft, drain. Trim and wash bean sprouts.
Bring water in a steamer to a boil. Place the fish on a plate and steam over high heat for 8-10 minutes until the eyes turn white and a chopstick pierces through easily. Discard the liquid and remove ginger and scallion.
Heat 1 tbsp oil in a wok over medium heat. Sauté ginger and scallion shreds, then turn to high heat, add bean sprouts and stir-fry for about 30 seconds. Season with salt. Transfer to plate around the fish.
Mix steamed fish soy sauce, sugar, and 2 tbsp water. Bring to a boil, optionally thicken with a little cornstarch slurry. Pour evenly over the fish.
In another wok, heat enough oil to 180°C. Fry the soaked vermicelli quickly until puffed and silvery white (5-10 seconds). Drain and sprinkle immediately over the fish to create silver threads.
Tips
The oil must be hot enough (around 180°C) for the vermicelli to puff instantly and not absorb oil; adjust steaming time based on fish size, test with a chopstick.
