White Jade and Emerald (Stir-fried Shrimp with Broccoli)

- Broccoli 200g
- Garlic 3 cloves
- Ginger 1 small piece
- Cooking wine 1 tbsp
- White pepper 1/2 tsp
- Salt to taste
- Light soy sauce 1 tbsp
- Cornstarch 1 tsp
- Vegetable oil 2 tbsp

Clean shrimp, devein, lightly flatten with knife, marinate with salt, cooking wine, white pepper, and cornstarch for 10 minutes.
Cut broccoli into florets, blanch in boiling water with salt and oil for 1 minute, drain and rinse with cold water.
Heat pan over medium heat, add 2 tbsp oil, when oil is 50% hot (moderate), add shrimp, stir-fry until pink, about 30 seconds; remove and set aside.
Leave a little oil in the pan, add minced garlic and ginger, sauté on low heat until fragrant, about 15 seconds.
Turn to high heat, add broccoli and shrimp, stir-fry quickly, add soy sauce and salt to taste, mix well about 30 seconds.
Pour in the cornstarch slurry, stir quickly until sauce coats the ingredients, about 10 seconds; serve immediately.
Tips
Do not overcook shrimp; remove immediately when color changes to stay tender. Adding salt and oil to the blanching water helps broccoli stay bright green.
