Stir-fried Eggs with Yellow Chives
Tender scrambled eggs and fragrant yellow chives come together in a quick stir-fry. A classic home-style dish that's savory, satisfying, and pairs perfectly with rice.

- Eggs 3
- Vegetable oil 2 tablespoons
- Salt 1/4 teaspoon
- Shaoxing wine (optional) 1 teaspoon
- White pepper 1/4 teaspoon

Wash and drain the yellow chives; cut into 4 cm lengths. Beat the eggs with half the salt and Shaoxing wine, whisk in one direction for about 30 seconds until frothy.
Heat a wok over medium heat; add 1 tablespoon of oil and swirl to coat. Turn to high heat. When hot, pour in the egg mixture and quickly scramble for about 20 seconds until just set; remove and set aside.
Add the remaining oil to the wok over high heat. Add the chives and stir-fry quickly for about 1 minute until bright yellow-green, tender, and fragrant.
Add the remaining salt and white pepper (if using), toss to combine. Return the eggs to the wok; stir-fry over high heat for about 10 seconds to mix well.
Turn off the heat immediately and transfer to a serving plate. Drizzle a few drops of sesame oil if desired. Serve hot.
