Guo Yi Silver Fish (Silver Fish Egg Pancake)
A classic Shandong dish, tender silver fish coated in egg batter and pan-fried until golden, with a soft and savory flavor that appeals to all ages.
Ingredients
10 items- Silver fish (whitebait) 200g
- Eggs 3
- All-purpose flour 2 tbsp
- Shaoxing wine 1 tbsp
- Salt 1/2 tsp
- White pepper a pinch
- Light soy sauce 1 tbsp
- Caster sugar 1 tsp
- Vegetable oil 3 tbsp
- Spring onions to taste

Place 200g silver fish in a colander, rinse gently under cold running water, then pat dry with paper towels and transfer to a bowl.
Add 1/2 tsp salt, 1 tbsp Shaoxing wine and a pinch of white pepper to the fish. Mix well and let marinate for 10 minutes.
In a large bowl, crack 3 eggs, add 2 tbsp flour and 1 tbsp water. Whisk in one direction for about 30 seconds until the batter is smooth and lump-free.
Pour the marinated silver fish into the egg batter and stir gently with chopsticks until each fish is evenly coated. Let rest for 2 minutes.
Set a non-stick pan over medium heat to warm up, then add 3 tbsp oil and swirl to coat. Reduce to low heat until the oil reaches about 150°C (just shimmering).
Pour the fish-batter mixture into the pan and quickly spread it into an even round pancake with a spatula. Cook over low heat for 3 minutes until the bottom is golden and set.
Carefully flip the pancake whole using a spatula. Continue to cook over low heat for another 3 minutes, gently pressing the surface to ensure the inside cooks evenly.
Drizzle 1 tbsp light soy sauce, 1 tsp sugar and 3 tbsp water around the edge of the pan. Swirl gently to combine, cover and simmer over low heat for 2 minutes.
Uncover, turn up the heat to high and reduce the sauce until it becomes syrupy and coats the pancake, about 1 minute. Turn off the heat.
Slide the pancake onto a serving plate, sprinkle with chopped spring onions (or coriander) and serve immediately.
Tips
Make sure the silver fish are thoroughly dried, otherwise the batter won't cling properly. Always fry over low heat to cook through without burning. Before flipping, shake the pan to confirm the pancake slides freely to keep it intact.
