Place 200g silver fish in a colander, rinse gently under cold running water, then pat dry with paper towels and transfer to a bowl.

Add 1/2 tsp salt, 1 tbsp Shaoxing wine and a pinch of white pepper to the fish. Mix well and let marinate for 10 minutes.
