Clear Soup with Bird's Nest
A bowl of crystal clear and savory bird's nest soup, with silky smooth texture. A top-grade nourishing delicacy in Chinese banquets.
Ingredients
7 items- Dried bird's nest 20g
- Clear chicken broth 500ml
- Ginger slices 3 slices
- Shaoxing wine 1 tsp
- Salt to taste
- Rock sugar 10g
- Goji berries a few

Place dried bird's nest in a large bowl, cover with cold water, soak for 4-6 hours, changing water 1-2 times, until soft and translucent.
Remove soaked nest, place on a white plate, use tweezers to carefully remove any remaining feathers and impurities, then gently rinse under running water and drain.
Put cleaned nest into a double-boiling pot, add ginger and wine, pour in chicken broth to submerge by 1 cm. Add rock sugar if using.
Cover pot, place in a steamer, bring to high heat then reduce to low, steam for 20-25 minutes until the nest is transparent and soup is clear.
Take out the pot, discard ginger, season with salt (lightly). Soak goji berries, sprinkle on top.
Ladle soup into small bowls and serve hot. Garnish with goji berries or edible petals if desired.
Tips
Ensure adequate soaking time; patiently remove impurities. Do not overcook as nest may dissolve. Use superior chicken broth for richer flavor.
