Baked Duck Rice
Combines crispy roast duck with soft rice, topped with melted cheese that pulls beautifully, fulfilling every bite.
Ingredients
14 items- Roast duck meat 200 g
- Day-old rice 300 g
- Onion 1/2
- Green peas 50 g
- Corn kernels 50 g
- Mozzarella cheese 100 g
- Butter 15 g
- Soy sauce 2 tbsp
- Oyster sauce 1 tbsp
- Heavy cream 1 tbsp
- Sugar a pinch
- Salt to taste
- Black pepper to taste
- Scallions a few

Cut the roast duck meat into 1 cm cubes; dice the onion; drain the peas and corn.
Over medium heat, melt butter, add onion and cook until translucent about 1 min. Add peas and corn, stir 30 seconds.
Increase to high heat, add day-old rice and stir-fry quickly until loosened, about 2 min. Season with salt and pepper. Set aside.
In a small bowl, mix soy sauce, oyster sauce, cream and sugar to make a sauce.
Spread the fried rice evenly in a baking dish, pressing lightly with a spoon.
Lay the duck pieces evenly over the rice, then drizzle the sauce over.
Sprinkle shredded mozzarella cheese generously over the top, covering completely.
Preheat oven to 200°C (400°F). Bake the dish in the middle rack for 10-12 minutes until cheese is melted and golden brown.
Remove from oven, garnish with chopped scallions, and serve hot.
Tips
Use day-old rice for better texture; roast duck can be store-bought; mix mozzarella with cheddar for extra flavor; for more stretch, add more mozzarella.
