Tacho (Mixed Stew)
Tacho is a hearty Chinese mixed stew combining tender pork, firm tofu, and colorful vegetables in a savory, lightly thickened sauce. A comforting one-pot meal.
Ingredients
16 items- Pork tenderloin 200 g
- Firm tofu 200 g
- Dried shiitake mushrooms 5 pieces
- Carrot 1 small
- Napa cabbage 1/2 head
- Ginger 1 small piece
- Garlic 3 cloves
- Scallions 2 stalks
- Shaoxing wine 1 tbsp
- Light soy sauce 2 tbsp
- Dark soy sauce 1 tbsp
- Cornstarch 1 tsp + 1 tbsp
- Cooking oil 3 tbsp
- White pepper 1/2 tsp
- Sugar 1 tsp
- Broth or water 1 cup (250 ml)

Thinly slice pork; combine with 1 tbsp wine, 1 tbsp soy sauce, 1 tsp cornstarch. Marinate 10 minutes.
Heat wok over medium-high; add 2 tbsp oil. Stir-fry pork until just browned (2 min). Remove.
Add remaining oil. Sauté ginger and garlic (30 sec) over medium heat. Add mushrooms and carrot; cook until carrot tender (2 min).
Add cabbage; stir-fry 2 min until soft. Return pork and add tofu.
Pour in broth; add remaining soy sauce, dark soy sauce, sugar, pepper. Boil, then simmer covered 5 minutes.
Uncover; stir in cornstarch slurry. Cook until sauce thickens (1 min). Drizzle sesame oil; garnish with scallions.
Tips
Marinating keeps pork tender; using broth enhances flavor; thickening with cornstarch makes the sauce cling to the ingredients.
