Steps (7 steps)

1

Wash chicken wings, score two slashes on each side for better flavor absorption, and pat dry with paper towels. In a bowl, combine with soy sauce, cooking wine, white pepper, and ginger slices. Mix well and marinate for 15 minutes.

about 15 min
2

Remove pits from salted lemons and finely chop. Mince garlic cloves. Set aside.

3

Heat a skillet over medium heat, add vegetable oil. Place marinated chicken wings in the pan, cook each side for about 4 minutes until golden brown. Remove and set aside.

about 8 min
4

Leave a thin layer of oil in the skillet, reduce heat to low. Add chopped salted lemons and minced garlic, stir-fry for about 30 seconds until fragrant.

about 1 min
5

Pour in the entire can of 7Up, increase heat to high and bring to a boil. Return chicken wings to the pan, reduce heat to medium-low, cover and simmer for 10 minutes, flipping twice during cooking.

about 10 min
6

Uncover, turn up the heat to high to reduce the sauce. Stir constantly until the sauce thickens and coats the chicken wings (about 3-4 minutes). Turn off heat.

about 4 min
7

Transfer chicken wings to a serving plate, drizzle remaining sauce on top, garnish with chopped scallions and white sesame seeds. Serve.

Tips

The carbonation in 7Up helps tenderize the chicken; salted lemons are quite salty, so additional salt is generally unnecessary; stir constantly during reducing to prevent the sauce from burning.
