Steps (7 steps)
Wash chicken wings, pat dry with paper towels, score both sides. Add cooking wine and ginger slices, mix well, marinate for 15 minutes.
Wash lemon, slice, squeeze out about 1 tbsp of lemon juice and set aside.
Heat a pan over medium heat, add 2 tbsp oil. When oil is hot, place chicken wings skin-side down, fry over medium-low heat until golden brown on both sides, about 6 minutes.
Leave some oil in the pan, add ginger and garlic slices, fry until fragrant (about 30 sec). Add chicken wings, cola, soy sauce, salt, and lemon juice, bring to a boil over high heat.
Reduce heat to low, cover and simmer for 10 minutes, flipping twice to ensure even coloring and flavor.
Uncover, add lemon slices, increase heat to high to reduce sauce, stir constantly for 2-3 minutes until the sauce thickens and coats the wings.
Plate the wings, drizzle with remaining sauce, and garnish with chopped scallions or white sesame seeds.
Tips
If you don‘t have cola, you can substitute with equal amount of sugar water, but the flavor will differ. Make sure to fry the wings until golden before braising for a better aroma. Stir constantly during reduction to prevent burning.
