This refreshing bok choy with shiitake mushrooms in oyster sauce symbolizes health and longevity. Quick, easy and nutritious.

- Dried shiitake mushrooms 6
- Garlic 3 cloves
- Oyster sauce 1 tbsp
- Light soy sauce 1 tsp
- Sugar 1/2 tsp
- Cornstarch 1 tsp
- Cooking oil 1 tbsp
- Salt Pinch

Soak dried shiitake in warm water for about 30 minutes until fully softened. Slice mushrooms, reserve and strain the soaking water. Wash bok choy and cut in half lengthwise from the root.
Bring a pot of water to a boil, add a pinch of salt and a few drops of oil. Blanch bok choy for about 30 seconds, then transfer to ice water or cold water. Drain and arrange neatly on a plate.
Heat 1 tbsp oil in a wok over medium heat. Add garlic slices and sauté for about 15 seconds until fragrant.
Increase heat to high, add mushroom slices and stir-fry for about 1 minute until edges turn slightly golden and aromatic.
Pour in reserved mushroom water (about 100ml), add oyster sauce, soy sauce and sugar. Stir to combine, bring to a boil then reduce heat to medium-low and simmer for 2 minutes to infuse flavor.
Stir cornstarch slurry, pour into the pan while stirring quickly. Cook for about 30 seconds until the sauce thickens enough to coat the back of a spoon.
Pour the mushrooms and sauce over the arranged bok choy. Serve immediately.
Tips
Adding oil and salt to the blanching water helps maintain the green color of bok choy; the mushroom soaking water is a natural flavor enhancer, don't discard; oyster sauce and soy sauce are salty, season salt carefully.
