Goji Berry and Pig Trotter Soup
A nourishing Cantonese soup with tender pig trotters rich in collagen, sweet red dates and goji berries, milky broth, warm and comforting.
Ingredients
7 items- Pig trotters 1 (about 600g)
- Goji berries 20g
- Red dates 5-6
- Ginger 1 piece (20g)
- Cooking wine 2 tbsp
- Salt to taste
- Water about 2 liters

Clean trotters, put in cold water with wine and ginger, boil then simmer 3-5 min to remove scum, rinse with warm water.
Transfer trotters to pot, add ginger, dates and hot water (2L). Bring to boil then lower to simmer, skim off fat.
Cover and simmer on low heat for 1.5 hours, occasionally skimming fat, until trotters are tender and broth turns milky.
Add rinsed goji berries, simmer another 20 minutes to infuse, broth becomes clearer.
Season with salt before turning off heat, stir and adjust taste. For thicker broth, boil briefly.
Ladle into bowls, garnish with green onions or cilantro. Serve hot. Trotters can be dipped in soy-vinegar sauce.
Tips
Start blanching in cold water for better impurity removal; long slow simmer is key for rich flavor; add goji berries late to avoid sourness.
