Chaozhou Gongfu Tea
Chaozhou Gongfu Tea is a traditional tea art from Chaoshan, Guangdong, emphasizing teaware, water temperature and brewing skills. The tea is rich, mellow and aromatic, a way of life.
Ingredients
5 items- Fenghuang Dancong tea 8 g
- Purified water 500 ml
- Gaiwan 1 piece
- Fairness pitcher 1 piece
- Tasting cups 3 pieces

Steps (7 steps)
Place 8 g tea in gaiwan, level with a tea scoop.
Boil water to 100°C, rinse teaware for 2 min to preheat.
Pour boiling water along gaiwan wall to fill, skim foam, discard water to wash tea (5 sec).
Refill with boiling water to 80%, cover, steep 20 sec until golden.
Strain tea into fairness pitcher to mix evenly.
Pour into cups, fill 70% each for consistent temperature.
Smell, observe color, sip slowly in three sips to enjoy aftertaste.
Tips
Use water at 100°C; Fenghuang Dancong needs high heat. Steep no more than 30 sec to avoid bitterness. Drain gaiwan completely after each infusion.
